My favorite greens are spinach and arugula mixed. Both that or spinach on its own work well for this. You can substitute crumbled Feta or blue cheese for the goat cheese.

Ingredients For spinach salad with strawberry balsamic vinaigrette

1/4 cfresh strawberry puree or strawberry preserves

2 Tbspbalsamic vinegar

6 Tbspextra virgin olive oil (best quality)

1 pinchsea salt and black pepper

4 cspinach and arugula mixed greens, or favorite variety

1/4 ccrumbled goat, Feta or blue cheese

2 tspchopped nuts - almonds, pecans or whole pine nuts

4 ozshredded chicken, rotisserie chicken works well

1green onion, sliced whites and greens

whole strawberries for garnish, optional

flaked salt for garnish, optional
How To Make spinach salad with strawberry balsamic vinaigrette

1Whisk together the strawberry puree, vinegar, oil, salt, and pepper. You can use an immersion blender. Set aside.

2Place greens into each bowl and top with cheese, nuts, chicken, and onions. Drizzle with dressing. Toss gently.

3Garnish with some fresh strawberries if available.

4To make a small quantity of strawberry puree - in a blender, combine 1 cup strawberries, 1 tablespoon sugar and 1/4 teaspoon lemon juice. To remove those pesky seeds, strain through mesh strainer. Leftovers can easily be frozen.
