This is my variation on an old family recipe. It's good on a sandwich or on its own. Toss into a green salad, add cooked and diced chicken and you have a wonderful meal. It's delicious!
Blue Ribbon Recipe
This simple apple slaw salad is sweet, tangy, and filled with different textures. The sweet apples have a nice crunch. Carrots add another layer of texture and a nice complement to the apples. Sweet and tangy, we liked the poppy seeds in the homemade vinaigrette. Enjoy this side dish all summer long with a piece of grilled chicken or fish or toss it on top of lettuce.

Ingredients For apple slaw salad
- VINAIGRETTE DRESSING

3 Tbspapple cider vinegar

3 Tbsphoney
-
2 tspmustard (regular, honey mustard, Dijon, etc)

1 1/2 tsppoppy seeds

3 Tbspolive oil
-
1 pinchsalt
-
1 pinchpepper
- SALAD
-
3/4 ccarrot, cut into matchsticks

2 mdapples, cored and cut into matchsticks

1/3 cdiced red onion
-
1/2 cslivered almonds, more if desired
-
1 ozdried cranberries, more if desired
How To Make apple slaw salad

1In a bowl, mix the vinaigrette ingredients; set aside.

2In a separate bowl, combine apple sticks, carrot sticks, and onion.

3Add vinaigrette and toss.

4Garnish with the dried cranberries and almonds.

5Cover and refrigerate for at least 30 minutes.

6Right before serving, toss again and garnish with more almonds and cranberries if desired.
