This is my variation on an old family recipe. It's good on a sandwich or on its own. Toss into a green salad, add cooked and diced chicken and you have a wonderful meal. It's delicious!

This simple apple slaw salad is sweet, tangy, and filled with different textures. The sweet apples have a nice crunch. Carrots add another layer of texture and a nice complement to the apples. Sweet and tangy, we liked the poppy seeds in the homemade vinaigrette. Enjoy this side dish all summer long with a piece of grilled chicken or fish or toss it on top of lettuce.

Ingredients For apple slaw salad

  • VINAIGRETTE DRESSING
  • 3 Tbsp
    apple cider vinegar
  • 3 Tbsp
    honey
  • 2 tsp
    mustard (regular, honey mustard, Dijon, etc)
  • 1 1/2 tsp
    poppy seeds
  • 3 Tbsp
    olive oil
  • 1 pinch
    salt
  • 1 pinch
    pepper
  • SALAD
  • 3/4 c
    carrot, cut into matchsticks
  • 2 md
    apples, cored and cut into matchsticks
  • 1/3 c
    diced red onion
  • 1/2 c
    slivered almonds, more if desired
  • 1 oz
    dried cranberries, more if desired

How To Make apple slaw salad

  • Mix vinaigrette ingredients and set aside.

    In a bowl, mix the vinaigrette ingredients; set aside.
  • In a separate bowl, combine apple sticks, carrot sticks, and onion.
