My mother made these delicious bars often when I was growing up. No apple butter on hand? Fruit spreads, preserves, jams, and jellies work just fine. We've even used cranberry sauce before! I hope you enjoy this recipe as much as I have and still do.

Buttery oat crumb layers hold in sweet and rich apple butter. These apple butter bars are a treat and taste like fall. The crumb bottom is packed down to form a crust and has a layer of apple butter on top. Then, it's topped with the remaining crumbs for a crunchy topping. These make a great dessert but would be nice with a cup of tea at breakfast. We used apple butter, but raspberry jam would be wonderful in these, too.

Ingredients For apple butter bars

1 1/2 call-purpose flour

1 tspbaking soda

1 tspsalt

2 1/2 cuncooked quick oats

1 1/2 cgranulated sugar

1 cbutter, melted
-
1 1/2 capple butter (or other jam/jelly/preserves/etc)
How To Make apple butter bars

1Preheat oven to 350 degrees. Grease a 13x9x2 pan.

2In a large mixing bowl, combine the all-purpose flour, baking soda, and salt.

3Add the oats and the sugar.

4Stir in the melted butter.

5Mix well.

6Press half of the mixture into the greased 13x9x2 inch pan.

7Top with apple butter.

8Sprinkle the rest of the crumb mixture on top; press gently with a spoon. Bake at 350 degrees for 55 minutes or until lightly browned.

9Cool and cut into bars.
